Homemade Trail Mix Muffins

Need a filling and unique snack? These homemade fruit and nut trail mix muffins are a great recipe to make ahead. These muffins allow me to have a convenient, simple, and healthy snack available between meals. Or, pair with Greek yogurt for a balanced and filling breakfast.

Each muffin contains fiber, healthy fats, and flavor. Used with whole foods like dried fruit, oats, seeds, and walnuts, this heart-healthy and energizing muffin recipe will be your new staple!

Ingredients

10 pitted dried dates, finely chopped
1/4 cup raisins
1/4 cup dried cranberries
1/2 teaspoon vanilla
1 cup warm water
2 tablespoons honey
2 cups old fashion or quick oats
1 cup almond flour
2 tablespoons cinnamon
1/4 teaspoon salt
1/4 cup chia seeds
1/4 cup pumpkin seeds
1/2 cup chopped walnuts

Directions

  1. Grease muffin pan and preheat oven to 350 degrees.
  2. Place chopped dates, raisins, cranberries, vanilla, water, and honey in a small mixing bowl. Mix and let sit for 5 minutes.
  3. Stir the remaining dry ingredients in a separate large bowl.
  4. Add dried fruit and water mixture to dry ingredients and mix well.
  5. Evenly distribute the batter in a muffin pan to make 12 muffins.
  6. Press down the batter in each muffin tray with the back of a spoon
  7. Bake for about 25 minutes, until the edges turn lightly brown and crisp.
  8. Let cool completely before removing from muffin pan to set.
