Ingredients
10 pitted dried dates, finely chopped
1/4 cup raisins
1/4 cup dried cranberries
1/2 teaspoon vanilla
1 cup warm water
2 tablespoons honey
2 cups old fashion or quick oats
1 cup almond flour
2 tablespoons cinnamon
1/4 teaspoon salt
1/4 cup chia seeds
1/4 cup pumpkin seeds
1/2 cup chopped walnuts
Directions
- Grease muffin pan and preheat oven to 350 degrees.
- Place chopped dates, raisins, cranberries, vanilla, water, and honey in a small mixing bowl. Mix and let sit for 5 minutes.
- Stir the remaining dry ingredients in a separate large bowl.
- Add dried fruit and water mixture to dry ingredients and mix well.
- Evenly distribute the batter in a muffin pan to make 12 muffins.
- Press down the batter in each muffin tray with the back of a spoon
- Bake for about 25 minutes, until the edges turn lightly brown and crisp.
- Let cool completely before removing from muffin pan to set.
