Pasta Salad Ingredients
- 1 pound of pasta, cooked and cooled slightly
- 1 pint of cherry tomatoes, sliced
- 1 can chickpeas, rinsed
- 4 ounces of sharp cheddar cheese, cubed
- 8 hard-boiled eggs, cooled and chopped
- 5 cups of baby spinach, sliced
Honey Mustard Dressing Ingredients
- 1/4 to 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon ground pepper
- 1 pinch onion powder
- 2 tablespoons dijon mustard
- 1 tablespoon fresh lemon juice
- 1.5 tablespoons white wine vinegar
- 3 tablespoons honey
- 5 tablespoons olive or canola oil
- 1/4 cup plain 2% Greek yogurt
Instructions
1. While eggs and pasta are cooking, make the dressing. Put all dressing ingredients except yogurt in a mason jar. Secure lid tightly, and shake together vigorously for a few minutes until combined. Whisk in Greek yogurt. Simple as that!
2. Mix the remaining pasta salad ingredients with dressing in a large bowl
