Simple Greek Chickpea Salad

Chickpeas, also known as garbanzo beans, are a vegetarian protein source to add to many different dishes. Chickpeas add not only protein to meals but also fiber, B6, and zinc.

Ingredients

  • 2 tablespoons white wine vinegar 
  • 4 tablespoons olive oil 
  • 1 tablespoon fresh lemon juice
  • 2 cans of chickpeas, rinsed
  • 1 carton of cherry tomatoes (I sliced each tomato in quarters)
  • 4 cups of sliced baby spinach
  • 2 teaspoons dried oregano
  • 1 tablespoon of fresh dill or teaspoon dried dill
  • 1 tablespoon of fresh parsley or 1 teaspoon dried parsley
  • 4 minced garlic cloves or 1/2 teaspoon garlic powder
  • 1/4 teaspoon fresh ground pepper
  • 1/4 teaspoon salt
  • 1/3 cup sliced kalamata olives
  • 1/3 cup crumbled feta cheese

Directions

1. In a mason jar, add olive oil, lemon juice, vinegar, oregano, dill, parsley, garlic, pepper, and salt. Cover tightly with a lid and shake for a couple of minutes. 

2. Add crumbled feta cheese and mix well, then add sliced olives.

3. In a large bowl, add beans, tomatoes, spinach. 

4. Top with dressing and mix thoroughly.
